*** Banana and apple Scones ***
Dairy free, egg free, gluten free and no added sugar
200g gluten free flour
100g Dairy free butter
2 ripen bananas (well mashed)
1 apple grated
1 tbsp cinnamon (optional)
• Preheat oven to 160 degrees celsius.
• Rub the butter into the flour and cinnamon.
• Add the mashed bananas and grated apple and mix well.
• Roll out on a floured surface and cut with cutter.
• Bake for around 20 minutes.

What do you do when mix everything by hand and mixture is still gooey
Tried first attempt and add to add another 50-100 grams
I use an electric mixer. It isn’t gooey, it’s dry enough to roll.
I made these and not great unfortunately. I used a mixer and had to thicken mix up too with a bit more flour. Q. Should recipe be GF self raising flour, as they were flat like cookies and very dry. Normal scones are made with SR flour, is it just a typo? Thanks.
Doesn’t need to be self raising flour but can be made with self raising flour. The reason recipe doesn’t indicate self raising is because any flour can used.
They should be around 2 inches thick before you cut them.
