Fruity breakfast fingers

***Dairy free, egg free, nut free and gluten free***

Ingredients

2 tbsp milled flaxseed

half a cup/125ml warm water

1 banana

1 cup /125g raspberries/chopped blueberries/chopped strawberries/mixed berries

4 tbsp/50g any butter or oil

1cup/110g flour (any flour)

1 cup/110g millet flakes (or any other breakfast flakes)

4 tbsp/50g corn flour

Method

  • Preheat oven to 180 degrees Celsius
  • Mix the milled flaxseed with the water. Whisk with fork. Set a side for at least 10 minutes.
  • Mash the banana and other fruit and add all other ingredients. Mix well.
  • Put in lined tin and bake for 18/20 minutes. It should start going golden brown but not hard.

Alternatives

  • Add half a cup of raisins/dried fruit
  • Add 2 tbsp of maple syrup/honey/golden syrup
  • Add a grated apple
  • Add 2 tbsp of any nut butter
  • Add half a cup of chopped nuts
  • 2 tsp nutmeg / cinnamon
  • Half a cup of dairy free chocolate chips
  • Add half a cup of any fruit puree

Peanut butter porridge fingers

***Dairy free, egg free and gluten free***

Ingredients

1 banana

2 tbsp peanut butter (or any nut butter)

1 tbsp milled flaxseed

50ml warm water

50g flour (any flour)

50g millet flakes (or any other breakfast flakes)

2 tsp corn flour

2 tsp cinnamon

Method

  • Preheat oven to 180 degrees Celsius
  • Mix the milled flaxseed with the water. Whisk with fork. Set a side for at least 10 minutes.

Banana bites

Very simple banana bites. No added sugar.

3 ingredient banana snack

Ingredients

1 ripe banana

100g plain flour

50g nut butter

Method

  • Preheat oven to 180 degrees celcuis.
  • Put all ingredients into blender and mix well. If it doesn’t come together, add a small a moment of water.
  • Roll out on floured surface and cut as required. You also cut after baking if you prefer.
  • Bake for 15 minutes.

Alternatives

  • If nut free, use any butter and add nutmeg or cinnamon for flavour.
  • Add a tablespoon of flaxseed.
  • Add raisins/dried fruit/chocolate chips.
  • Serve with chocolate spread or make a sandwich biscuit.
  • Add a grated apple.
  • Replace 20g of flour with 20g of cocoa powder.

Ice cream

Dairy free, egg free and sugar free ice-cream

Ingredients

3 ripe bananas
150ml coconut milk (any milk will work)

2 tbsp cocoa powder

5 strawberries chopped in small pieces

2 tsp vanilla essence

1 tbsp golden syrup/maple syrup/corn syrup (optional)

Method

  • Chop banana and put in freezer over night.
  • If using canned coconut milk, put in fridge over night so you can take off the cream.
  • Blend frozen in blender and add milk and syrup, blend until you get a creamy consistency.
  • Split mix 3 into 3 separate bowls.
  • One bowl add the vanilla essence and mix well – Vanilla ice cream
  • One bowl add the cocoa powder and mix well – chocolate ice-cream
  • One bowl add the strawberries and mix well – Strawberry ice-cream.
  • Put back in freezer for at least 3 hours to set.
  • If you prefer soft ice-cream serve immediately.

Alternatives

  • Half a cup of Chopped raspberries (or any fruit)
  • 2 tbsp of peanut butter
  • 2 tbsp Chocolate chips
  • Broken up cookies

Banana and apple scones

Dairy free, egg free, gluten free and no added sugar

Extremely easy

Ingredients

200g gluten free flour
100g Dairy free butter
2 ripen bananas (well mashed)

1 apple grated
1 tbsp cinnamon (optional)

Method
• Preheat oven to 160 degrees celsius.
• Rub the butter into the flour and cinnamon.
• Add the mashed bananas and grated apple and mix well.
• Roll out on a floured surface and cut with cutter.
• Bake for around 20 minutes.

Pancakes – vegan

Can easily be made gluten free too.

Ingredients

1 cup/180g of any flour
1 cup/240ml of milk (any milk will work)
A banana or cup of apple puree
1 tablespoon of oil

Method

  • Mix the flour, milk and oil together.
  • Mash the banana/apple puree and add to mixture and mix well.
  • Best to use either an electric mixer or blender otherwise you will end up with lumps of banana.
  • Fry on a hot frying pan using either df butter or df margarine.

Alternatives

  • For thickener/fluffier pancakes use self raising flour and fry on a medium heat until golden brown.
  • The crepe/thinner pancakes are really nice using buckwheat flour.
  • Instead of the banana or apple use a tablespoon of milled flaxseed mixed with 3 tablespoons of hot water.
  • Add chocolate chips or cocoa powder for chocolate pancakes

Nutty banana bread

Easily made free of added sugar

Ingredients

2 ripen bananas well mashed
200g self raising flour (I use Aldi gf self raising)
1 tbsp baking powder
1 tbsp cinnamon
1 tablespoon honey (optional)
50g chopped nuts
70g dairy free butter (I use Stork margarine)
30g nut butter

** Method **

  • Preheat oven to 160 degrees celsius
  • Sieve the flour, baking powder and cinnamon together.
  • Mix in the mashed bananas
  • Add the chopped nuts and honey
  • Melt the butters and add. Mix well.
  • Place in loaf tin and bake for 40/45 minutes.

Carrot and Courgette muffins

Ingredients

5 oz self raising flour (I use Aldi self raising gluten free flour)

1oz milled flaxseed

A pinch of salt

1 teaspoon baking powder

1 teaspoon mixed spice

50 ml rapeseed oil

1 carrot (finely grated)

1 courgette (finely grated)

2 well ripe bananas

Method

  • Preheat oven to 180 degrees Celsius
  • Put all ingredients except bananas into a bowl and mix well.
  • Mash bananas into other ingredients and completely combine.
  • Put in bun cases.
  • Bake for 15/18 minutes.

Alternatives

  • If not gluten free, this recipe works well with half wholemeal flour/half white flour
  • Add a handful of well chopped spinach

Ingredients

  • 8oz flour (I use gluten free plain flour but any flour mix will work)
  • A pinch of salt
  • 2 teaspoon baking powder
  • 4oz sugar
  • 80 ml favourless oil (sunflower, vegetable, rapeseed etc)
  • 3 well ripe bananas (well mashed)

Method

  • Preheat oven to 160 degrees Celsius
  • Mix all ingredients except bananas together.
  • Add the bananas into other ingredients and mix well.
  • I sprinkled some sugar on top
  • Bake for 50 minutes.

Alternatives

  • If not gluten free, this recipe works well with half wholemeal flour/half white flour
  • Add 50g raisins
  • Add 50g grated apples
  • Add 50g chopped nuts
  • Add 50g chocolate chips
  • Swap 30g of flour with cocoa powder

Healthy Vegetable muffins

Dairy free, soya free, egg free and gluten free healthy savoury muffins

1 medium courgette – finely grated
1 medium carrot – finely grated
30g peas
30g sweet corn
100ml any milk
60ml yogurt
60ml flavourless oil
1 well mashed banana
250 plain flour
3 tsp baking powder
Pinch of salt

*** Method ***

• Preheat oven to 180 degrees Celsius
• Mix the vegetables, milk, yogurt, oil and banana well together
• Slowly add the flour, baking powder and salt. Make sure it’s fully mixed but do not over mix.
• Spoon in to bun cases
• Bake for 15/18 minutes

TIPS

  • Rice milk is the best alternative milk for baking
  • I use coconut yogurt (koko)
  • If you use fruit flavoured yogurt it adds a variation to the flavour
  • I used rapeseed oil but sunflower or vegetable oil also works
  • If there is any of the vegetables you do not wish to use, add more of a different vegetable.
  • I used Aldi Gluten free flour
  • If you remove the juice from the grated vegetables then add 30ml extra milk.
  • If you are not gluten free then this recipe works well with half plain flour and half Wholemeal flour.
  • They freeze well so handy for lunch box.
